Rose's Zucchini Parmesan

This is a recipe that I love and was originally taught to me by my Italian mother Maria and enhanced by yours truly!  Goes well with Pasta and a good glass of red wine! Try Ménage à Trois by Folie à Deux.


Ingredients:

4-5 Small-Medium Zucchini
1    Can Stewed Tomatoes crushed with potato masher
1    Can Tomato Sauce (8 oz.)
1 Tbsp. Italian Seasoning
Season Salt and Garlic Powder to taste
1 Tbsp. Olive Oil

Directions:

Cut Zucchini into circle slices and place in Large Frying Pan. Drizzle olive oil  and seasoning onto zucchini. Then add stewed tomatoes and tomato sauce. Cook at medium heat with lid until starts to boil then reduce heat to simmer, then stir in Parmesan cheese  Stir occasionally and test with fork to tender but do not let it get mushy. Top with Mozzarella cheese but do not stir in, Turn heat off and place lid on, let sit for 5 minutes (cheese should be melted at this point) then serve.
